We Grew a Salad and Then Some

Despite a few hurdles and a slow start at getting seeds into the ground, the garden is flourishing.

Tonight, a basket loaded with lettuce, arugula, nasturtium, radishes and walking onions made its way to the kitchen for dinnertime.

The comfy early summer evenings on the deck have been our favorites lately. While the grill does its magic on one end of the deck, we sip margaritas and watch Isai play on the other.

The view from the deck reminds me of a park. The canopy of lush trees gives us a little shade while the golden rays of the setting sun pour in from across the pond. It’s a perfect, relaxing setting for enjoying produce fresh from the garden.

We’ve been tossing the walking onions into just about everything lately. This meal was no different. A handful into the salad. A handful into the burgers. Mix and done.

The greens and radishes all got a quick rinse and chop. Then, naturally, we dabbed them with some ranch dressing for truly good measure.

My niece Zoey said it best – “I want to grow a salad.” I think that’s been a pretty solid goal for all of us lately. Thankfully, I can proudly say we’ve achieved it.
